Ingredients

2 pounds Wagyu Ground Beef

1 egg
-
1 cup shredded Colby-Jack cheese
-
½ cup Goldfish Crackers, crushed fine

½ cup Worcestershire sauce
-
¼ cup minced green onions
-
1 cup fresh mushrooms, chopped
-
¼ cup fresh cilantro
-
5 cloves garlic (5 teaspoons minced garlic)

3 teaspoons ground pepper
-
1 teaspoon cumin
-
2 teaspoons chili powder
-
1 teaspoon thyme
-
2 teaspoons onion powder
-
2 teaspoons paprika
-
1 pound bacon, cooked and chopped

½ cup your favorite barbecue sauce
Directions
Preheat smoker to 150.
Mix beef and all other ingredients together except barbecue sauce. Form meat into a log shape that is evenly thick. Place on silicone mat or aluminum foil in smoker and smoke for 2 hours, or until the internal temperature reaches 110 degrees F.
Brush meat log with barbecue sauce and increase heat to 400 degrees F.
Remove from smoker when it reaches an internal temperature of 125-145 degrees F, depending how well done you like it. Let it rest, serve, and enjoy!
